Secreto Iberico pork comes from the area between the shoulder and the belly of the Iberian black pig — a muscle with intramuscular fat infiltration characteristic of this breed, resulting from Iberian genetics. The flavour is deep, the fat melts during grilling, and the result is a pork steak with no equivalent in conventional pork.
Iberian Black Pig: the breed that defines the cut
The Iberian breed (black pig) is genetically different from white pigs: the ability to infiltrate intramuscular fat into the muscles is an intrinsic characteristic of the breed. Animals under the "montanheira" regime (fed with acorns) have an oleic acid profile in their fat similar to olive oil.
