The chuck eye roll is extracted from the rib area of the beef, between the 6th and 12th thoracic vertebrae. Anatomically, this is the region with the greatest genetic predisposition to marbling in Wagyu Kuroge Washu. In grades A4 and A5, the BMS (Beef Marbling Score) in this area typically ranges between 9 and 12, with fat densely and visually characteristically distributed.
Miyazaki-gyu A5 and Kagoshima-gyu A4: practical differences
Both prefectures produce Kuroge Washu (Japanese Black) Wagyu, fed with grains and rice straw for a minimum period of 26 months. Miyazaki-gyu A5 presents a more pronounced buttery finish; Kagoshima-gyu A4 maintains greater texture firmness with equally generous marbling.

- Preparation time
- 2cm steak: 90 seconds per side, rest for 3 minutes.
- Recommended Method
- Cast iron pan at 220ºC, no added fat. Fleur de sel and black pepper after cooking. For whole piece: sear exterior then oven at 130ºC until internal temperature of 52–54ºC.
