Free-range chicken is raised with outdoor access and supplementary feed, which results in meat with a firmer texture and more pronounced flavour than intensively farmed chicken. Weighing between 2.6 and 2.9 kg per unit, it is suitable for roasting whole or cutting into pieces.
Practical difference from conventional chicken
Greater mobility and a longer rearing period develop the animal's musculature differently — the result is meat with more fibre, less retained water, and a richer flavour. For long roasts in the oven or on the grill, this texture is an advantage.

Preparation
Oven at 180ºC for 1h30 to 2h depending on weight. Grill or barbecue: cut into quarters, 20 to 25 minutes per side at medium heat. Minimum internal temperature: 75ºC.
